Methi Lagan

My sister-in-law, Simi, is an excellent cook. She has a wide repertoire of recipes, including vegetarian, vegan & meat dishes. She also bakes & makes excellent desserts. When we visit Simi, we can be assured of delicious food, that she can rustle up in a very short time.

One of her specialties is, Methi Lagan. Simi often makes this appetizer for family functions and it is alway enjoyed by everyone. When a viewer of this website, recently requested this recipe, I knew I could give her an excellent recipe from Simi.

INGREDIENTS

  1. 1 dozen bunches of methi leaves
  2. approx 10 green chillies, crushed
  3. 2 onions grated
  4. 1 cup semolina
  5. 1 cup gram* flour
  6. 1 cup mealie meal**
  7. 1 tin creamstyle sweetcorn
  8. 1 cup oil
  9. 1 cup fresh milk
  10. 3 teaspoons baking powder

Method

  1. Wash methi leaves thoroughly
  2. Place in dish
  3. Mix all the dry ingredients
  4. Add all the rest of the ingredients together. Mix thoroughly
  5. Bake at 180 °C. for about 25-30 minutes
  6. Remove from oven and allow it to cool
  7. When cool, cut in squares
  8. Serve with sauces

* gram flour is also know as chick pea flour, besan, garbanzo beans flour and channa flour. These terms are used in the recipe.
** If you cannot find mealie meal flour, use cornmeal
